Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C). Gather all your tools: a mixing bowl, whisk, and baking sheets.
  2. In a saucepan, melt ½ cup of unsalted butter. Cook until golden brown and nutty, then pour over 4 ounces of white chocolate.
  3. In a bowl, whisk together 2 eggs, ¾ cup granulated sugar, and ½ cup light brown sugar for 6-8 minutes until light and fluffy.
  4. Add the melted white chocolate mixture, 1 teaspoon vanilla extract, 1 teaspoon ube extract, and ½ cup ube halaya. Mix everything well.
  5. In another bowl, whisk together 1 ½ cups flour, ½ teaspoon salt, and 1 teaspoon baking powder. Gradually add dry ingredients to wet mixture.
  6. Line two baking sheets with parchment paper. Use a cookie scoop to drop dollops of dough onto the sheets, spacing them 3 inches apart.
