Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan using butter or non-stick spray.
  2. In a small bowl, combine 1/3 cup of light brown sugar with 1 teaspoon of cinnamon. Set this mixture aside.
  3. In a large mixing bowl, cream together 2/3 cup of white sugar and 1/2 cup of softened salted butter until light and fluffy (about 3-5 minutes).
  4. Add 2 eggs one at a time, mixing well after each addition, then stir in 1 1/2 teaspoons of pure vanilla extract.
  5. In another bowl, whisk together 1 1/2 cups of all-purpose flour and 1 3/4 teaspoons of baking powder until well combined.
  6. Gradually add the flour mixture to the creamed butter mixture, alternating with 1/2 cup of milk, mixing just until combined.
  7. Pour half of the batter into the prepared loaf pan, add chopped apples and half of the cinnamon-sugar mixture, then spread remaining batter on top.
