For the Chicken Marinade
  • 1 lb Boneless, Skinless Chicken Thighs Can be swapped for chicken breasts
  • 1/4 cup Orange Juice
  • 1 tbsp Orange Zest
  • 2 tbsp Lemon Juice
  • 1 tbsp Lemon Zest
  • 2 tbsp Olive Oil Can use avocado oil for higher heat cooking
  • 3 cloves Garlic Minced
  • 1 tbsp Paprika Smoked or Sweet
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Red Wine or Apple Cider Vinegar Can use lime juice as a substitute
For the Sautéed Zucchini
  • 2 medium Zucchini Sliced; yellow squash can be substituted
  • 1/4 cup Fresh Parsley Or Cilantro
  • 1 small Shallot Optional, adds depth of flavor
  • 1/4 cup Parmesan Cheese Optional, adds richness

Method
 

Cooking Instructions
  1. Marinate the Chicken: Whisk together orange juice, orange zest, lemon juice, lemon zest, olive oil, minced garlic, paprika, cumin, oregano, salt, pepper, and vinegar. Toss the chicken thighs until coated and let marinate for 20-30 minutes at room temperature, or up to 8 hours in the refrigerator.
  2. Heat Cooking Surface: Preheat your skillet over medium-high heat or grill to medium-high.
  3. Cook the Chicken: Add marinated chicken to hot skillet or grill. Cook for 4-6 minutes per side for thighs, or 3-4 minutes for breasts until nicely browned and reaches 165°F.
  4. Prepare the Zucchini: In a second skillet, heat olive oil and butter over medium heat. Add sliced zucchini, season with salt, and cook undisturbed for 2 minutes. Toss and continue cooking for another 2-3 minutes until tender-crisp.
  5. Add Flavor to Zucchini: Stir in shallot and garlic, cooking for 30-60 seconds. Off the heat, add lemon juice, lemon zest, pepper, and parsley.
  6. Serve Your Meal: Arrange chicken and zucchini on a serving platter, drizzle with chicken juices, and garnish with lemon wedges and flaky salt.
