- Preheat your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
- Core each apple, leaving a half-inch intact at the bottom, and place them upright in the baking dish.
- In a medium bowl, mix together crumbled feta, dried cranberries, cinnamon, and vanilla extract.
- Stuff each apple with the filling, packing it gently without breaking the apples.
- Drizzle honey over each filled apple and place a small pat of butter on top.
- Cover the dish with foil and bake for 25-30 minutes until apples are tender.
- Remove the foil and bake for an additional 5-10 minutes until tops are golden.
