Step-by-Step Instructions
  1. Preheat grill to medium-high heat (400°F). Brush grill grates with neutral oil. Grill pineapple slices for 2-3 minutes per side until caramelized.
  2. Preheat oven to 350°F. Spread tortilla chips evenly in an oven-safe dish.
  3. Chop grilled pineapple and layer over chips. Add shredded BBQ chicken, chopped red onions, and candied jalapenos. Top with Monterey Jack cheese.
  4. Bake nachos for 5-10 minutes until cheese is melted and bubbly.
  5. Remove from oven, let cool for a minute and serve with sour cream or guacamole.
