Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease your 9x13 inch baking pan.
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Incorporate egg yolk and ice water, mixing gently until a dough forms. Press into the prepared pan and pre-bake for 15-20 minutes until light golden.
  3. In a medium saucepan, combine fresh blackberries and granulated sugar. Heat over medium heat, stirring gently for about 5-7 minutes until the blackberries break down. Add lemon juice and cornstarch, cooking for an additional 1-2 minutes until thickened. Let cool slightly.
  4. In a large bowl, whisk together brown sugar, baking powder, and flour. Cut in cold butter until crumbly. Mix in egg and vanilla extract. Fold in chopped pistachios.
  5. Pour blackberry filling over the pre-baked crust, then sprinkle pistachio topping over it. Press it down gently. Bake for 30-35 minutes until the topping is golden brown and bubbly.
  6. Allow the bars to cool completely in the pan for 1-2 hours before slicing. Enjoy!
