Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease your 9x13 inch baking pan.
- In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Incorporate egg yolk and ice water, mixing gently until a dough forms. Press into the prepared pan and pre-bake for 15-20 minutes until light golden.
- In a medium saucepan, combine fresh blackberries and granulated sugar. Heat over medium heat, stirring gently for about 5-7 minutes until the blackberries break down. Add lemon juice and cornstarch, cooking for an additional 1-2 minutes until thickened. Let cool slightly.
- In a large bowl, whisk together brown sugar, baking powder, and flour. Cut in cold butter until crumbly. Mix in egg and vanilla extract. Fold in chopped pistachios.
- Pour blackberry filling over the pre-baked crust, then sprinkle pistachio topping over it. Press it down gently. Bake for 30-35 minutes until the topping is golden brown and bubbly.
- Allow the bars to cool completely in the pan for 1-2 hours before slicing. Enjoy!
