For the Chicken
  • 4 pieces Chicken Thighs boneless or bone-in
  • 2 tablespoons Olive Oil for searing
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
For the Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder optional
  • 1 teaspoon Paprika smoked paprika for a twist
For the Sauce
  • 2 tablespoons Butter or margarine
  • 1 medium Shallot finely chopped
  • 3 cloves Garlic minced
  • 1 cup Chicken Broth or vegetable broth
  • 2 tablespoons Lemon Juice fresh or bottled
  • 1 teaspoon Fresh Thyme or dried thyme
  • 1/2 teaspoon Red Pepper Flakes optional
  • 1 cup Heavy Cream or half-and-half
  • 2 tablespoons Fresh Parsley chopped for garnish

Method
 

Cooking Instructions
  1. Start by patting the chicken thighs dry with paper towels and let them rest on a cutting board.
  2. In a small bowl, combine garlic powder, onion powder, paprika, kosher salt, and black pepper; rub over chicken.
  3. Heat olive oil in a skillet over medium heat, add chicken skin-side down, and cook for 5 minutes.
  4. Flip the thighs and cook for another 8 to 10 minutes until the internal temperature reaches 165°F, then remove them.
  5. In the skillet, melt butter, sauté shallot and garlic for 1 minute until fragrant.
  6. Stir in chicken broth, lemon juice, and thyme, simmer for 2 minutes.
  7. Add red pepper flakes, then stir in heavy cream and simmer for 5 minutes, returning the chicken to coat.
  8. Garnish with parsley and serve hot with mashed potatoes or crusty bread.
