  • 2 tablespoons Citrus (Lime) fresh juice preferred
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
For the Bowl
  • 1 medium Avocado fresh to prevent browning
  • 1 cup Corn (Fresh or Canned) fresh recommended
  • 0.5 cup Cilantro or replace with basil or mint
For Assembly
  • 1 cup Grains (Optional) quinoa or brown rice
  • 0.5 cup Cilantro-Lime Dressing for added flavor

Method
 

Preparation
  1. Marinate the chicken by combining citrus juice, smoked paprika, and cumin in a bowl. Add chicken and let marinate for at least 20 minutes.
  2. Preheat the grill to medium-high heat, approximately 400°F (204°C). Pat marinated chicken dry.
  3. Grill the chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (74°C).
  4. Slice the avocado and prepare corn by cutting fresh kernels off the cob or draining canned corn.
  5. Assemble the bowl starting with a base of grains, then layer with grilled chicken, corn, and avocado.
  6. Drizzle with cilantro-lime dressing and garnish with lime wedges and cilantro.
