- Remove any giblets from the cavity of the turkey and pat the skin dry.
- Gently slide butter between the turkey skin and breast meat, then rub the remaining butter all over the turkey.
- Stuff the cavity with lemon, rosemary, and thyme.
- Tie the turkey legs together with kitchen string.
- Combine water, onions, lemon wedges, and garlic in the roasting pan.
- Place the turkey on top of the onion and garlic mixture, then season with poultry seasoning.
- Roast the turkey for approximately 3 1/2 to 4 hours, covering with foil for the first 2 hours.
- Baste the turkey every 20-30 minutes after removing the foil.
- Let the turkey rest uncovered for at least 45 minutes before carving.
