  • 4 ears Corn on the cob Fresh is best, frozen works too
  • 4 Hard-boiled eggs Cooked separately and mixed in
Broth and Sauce
  • 1 cup Beer Optional, lager or IPA preferred
  • 4 cloves Garlic Adjust amount based on taste
  • 1 cup Unsalted butter Rich base for sauce
  • 2 tbsp Cajun seasoning Essential for flavor depth
  • 1 tbsp Old Bay seasoning Optional for added complexity

Method
 

Preparation Steps
  1. In a large stockpot, bring 4 quarts of water to a rolling boil. Stir in Cajun seasoning, Old Bay seasoning, and beer (if using), and simmer for about 5 minutes.
  2. Add the small red potatoes to the boiling broth and cook for 10-12 minutes, until they are nearly fork-tender.
  3. Add the sliced andouille sausage and the corn on the cob to the pot, cooking for an additional 5 minutes.
  4. Gently add the jumbo shrimp and snow crab clusters into the pot, cooking for just 2-3 minutes.
  5. While the seafood boils, melt 1 cup of unsalted butter in a skillet over medium heat. Add minced garlic and sauté for about 1-2 minutes.
  6. Carefully drain the pot, transferring the Cajun Seafood Boil to a large platter. Generously drizzle the garlic butter sauce over the top.
