Step-by-Step Instructions
  1. Slice the zucchini in half lengthwise. Score the flesh in a crisscross pattern and sprinkle kosher salt on the cut sides. Let it sit for 15 minutes.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add minced garlic and crushed red pepper flakes, sauté for 1-2 minutes until golden and fragrant. Transfer to a bowl.
  3. Pat the zucchini dry after 15 minutes. Heat an additional tablespoon of olive oil in the same skillet. Sear zucchini halves flesh-side down for 2-3 minutes until golden brown, then transfer to a baking sheet.
  4. Preheat the oven to 425°F (220°C). Brush the cut sides of the zucchini with the garlic-oil mixture and bake for 8-10 minutes until tender but slightly firm.
  5. Sprinkle mozzarella and Parmesan cheese over the zucchini halves. Switch oven to broil and broil for 2-3 minutes until the cheese is bubbly and golden.
  6. Remove from the oven and garnish with fresh basil leaves. Serve immediately while hot.
