- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Cook bacon in a skillet until crispy, about 8–10 minutes. Crumble and set aside.
- Slice the potato rolls in half horizontally and place the bottoms on the prepared baking sheet.
- Melt butter in a saucepan, stir in chives, garlic salt, and onion powder. Brush one-third onto the roll bottoms.
- Layer half of the sliced Colby Jack cheese over the rolls, followed by the cooked chicken and crumbled bacon, then drizzle ranch dressing.
- Add remaining cheese, brush more butter mixture on top, and seal with roll tops.
- Brush remaining butter mixture over the tops and sprinkle with grated Parmesan.
- Cover loosely with foil and bake for 20 minutes, then uncover and bake for an additional 5–10 minutes until golden brown.
- Slice rolls apart and serve warm with extra ranch dressing on the side.
