Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Cook bacon in a skillet until crispy, about 8–10 minutes. Crumble and set aside.
  3. Slice the potato rolls in half horizontally and place the bottoms on the prepared baking sheet.
  4. Melt butter in a saucepan, stir in chives, garlic salt, and onion powder. Brush one-third onto the roll bottoms.
  5. Layer half of the sliced Colby Jack cheese over the rolls, followed by the cooked chicken and crumbled bacon, then drizzle ranch dressing.
  6. Add remaining cheese, brush more butter mixture on top, and seal with roll tops.
  7. Brush remaining butter mixture over the tops and sprinkle with grated Parmesan.
  8. Cover loosely with foil and bake for 20 minutes, then uncover and bake for an additional 5–10 minutes until golden brown.
  9. Slice rolls apart and serve warm with extra ranch dressing on the side.
