  • 1 Red Onion (diced) For milder flavor, use green onions.
  • 1 Jalapeño (finely chopped) Omit for milder dish or use pickled.
  • 1/2 cup Chopped Olives (optional) Skip for a less salty flavor.
For Topping
  • 1 Lime (juiced) Fresh lemon juice can be substituted.
  • 1/4 cup Cilantro (to garnish) Parsley can be used if cilantro isn’t available.

Method
 

Steps
  1. Season the chicken breasts generously with taco seasoning and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until browned.
  3. Let the chicken cool, then chop into ½-inch cubes.
  4. In a bowl, whisk together red enchilada sauce, sour cream, and lime juice.
  5. Add chicken cubes, cooked pasta, black beans, corn, onion, jalapeño, and olives into the bowl and stir gently.
  6. Garnish with chopped cilantro, cover, and refrigerate for at least an hour.
  7. Serve chilled and enjoy!
