- Begin by washing 2–3 medium cucumbers under cool running water, ensuring you remove any dirt. If the skin is bitter, peel them, but leaving the skin on adds extra nutrients. Cut the cucumbers into roughly chopped pieces, aiming for 1-inch chunks to make blending easier.
- In a blender, combine the chopped cucumbers, 1/2 cup of freshly squeezed lime juice, 4 cups of water, and a sweetener such as agave or simple syrup to taste. Add a handful of fresh mint leaves, having lightly slapped them beforehand to release their oils. Blend on high for about 30 seconds, until the mixture is smooth and has a bright green color.
- Set a fine-mesh strainer over a large bowl or pitcher, then pour the blended Cucumber Lime Agua Fresca mixture into it. Using a spoon, press down on the pulp to extract as much liquid as possible, leaving behind the fibrous bits.
