  • 3 tablespoons Aji Amarillo Paste Turmeric and paprika or a mild chili paste can be used, though the flavor will differ.
  • 1 medium Yellow Onion
  • 2 cloves Garlic
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream or Evaporated Milk Evaporated milk provides a lighter option.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Sugar optional
For Garnish & Serving
  • 1/4 cup Fresh Cilantro
  • 2 cups Cooked White Rice or Quinoa
  • 1 cup Fried Plantains

Method
 

Step-by-Step Instructions
  1. Season the chicken thighs or breasts with salt and black pepper. Allow to rest for about 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove chicken and keep warm.
  3. Reduce the heat and add diced yellow onion to the skillet. Sauté for 4-5 minutes until translucent, then add minced garlic and ground cumin cooking for an additional minute.
  4. Stir in the aji amarillo paste and cook for 2 minutes. Pour in chicken broth and deglaze the skillet, then add cream or evaporated milk.
  5. Return the chicken to the skillet with the sauce and simmer for 5 minutes, garnish with cilantro before serving.
