  • 1 cup Cottage Cheese or Greek yogurt as a substitute
  • 1 cup Rolled Oats or quick oats in a pinch
  • 1/2 cup Applesauce or grated apple
  • 1 large Egg or 1/4 cup unsweetened applesauce for egg-free
  • 1 teaspoon Cinnamon no substitute needed
  • 2 tablespoons Honey or Maple Syrup optional
  • 1 teaspoon Baking Powder ensure freshness
  • 1/4 teaspoon Salt optional for low-sodium diets
For Optional Add-Ins
  • 1/2 cup Chopped Nuts (Pecans or Walnuts)
  • 1/2 cup Chocolate Chips optional
  • 1/2 cup Raisins optional

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, large egg, and cinnamon.
  3. If using, add honey or maple syrup, baking powder, and salt, then stir until well combined.
  4. Let the batter rest for about 5 minutes.
  5. Fill each muffin cup with the batter almost to the top.
  6. Bake for 18–20 minutes until lightly golden.
  7. Cool in the pan for a few minutes, then transfer to a wire rack.
  8. Enjoy warm or store in an airtight container.
