- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
- In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, large egg, and cinnamon.
- If using, add honey or maple syrup, baking powder, and salt, then stir until well combined.
- Let the batter rest for about 5 minutes.
- Fill each muffin cup with the batter almost to the top.
- Bake for 18–20 minutes until lightly golden.
- Cool in the pan for a few minutes, then transfer to a wire rack.
- Enjoy warm or store in an airtight container.
