For the Bread
  • 3 cups Overripe Mashed Bananas Use very ripe bananas for optimal sweetness.
  • 1/2 cup Melted Vegan Butter Can be substituted with dairy butter.
  • 1/2 cup Maple Syrup Honey can be used as an alternative.
  • 1 cup Unsweetened Almond/Oat Milk Any plant-based milk works.
  • 1 teaspoon Vanilla Extract Use pure extract for best taste.
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Cinnamon Adjust to taste.
  • 1/2 teaspoon Salt
  • 2 cups All-Purpose Flour (Regular/Gluten-Free) Can be substituted with a gluten-free blend.
  • 1 cup Old-Fashioned Rolled Oats Can be omitted for a gluten-free version.
For the Cinnamon Swirl
  • 1/4 cup Melted Vegan Butter Can be replaced with dairy butter.
  • 1/2 cup Light Brown Sugar Brown sugar can replace it.
  • 1 tablespoon Cinnamon Use more for stronger flavor.
For the Frosting
  • 1 cup Powdered Sugar Adjust based on personal preference.
  • 1/4 cup Melted Vegan Butter
  • 1/4 cup Softened Vegan Cream Cheese Dairy versions can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with melted vegan butter or line with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Add melted vegan butter, maple syrup, almond milk, and vanilla extract. Stir until well combined.
  3. In another bowl, mix baking powder, baking soda, cinnamon, and salt with the wet ingredients. Gently fold in all-purpose flour and rolled oats until just combined.
  4. Pour half of the batter into the prepared loaf pan. Whisk together the cinnamon swirl ingredients and dollop it over the batter. Use a knife to create swirls.
  5. Add the remaining batter on top and swirl with the remaining cinnamon mixture.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean. The top should be golden brown.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack. Prepare the frosting and spread it over the cooled bread.
