Ingredients

For the Bread
  • 3-4 medium Ripe Bananas Use very ripe bananas for maximum sweetness and moisture.
  • 1 cup Granulated Sugar Adds sweetness; coconut sugar can substitute for less refined flavor.
  • 1/2 cup Brown Sugar Provides a caramel-like depth; either light or dark works well.
  • 1/2 cup Unsalted Butter Adds richness; melted coconut oil can be a dairy-free alternative.
  • 2 large Eggs Binds the loaf together; substitute with flax eggs for vegan.
  • 1 teaspoon Vanilla Extract Enhances all flavors; almond extract can be used for a unique depth.
  • 1 teaspoon Baking Soda Essential for leavening; ensure it’s fresh for the best rise.
  • 1/2 teaspoon Salt Balances sweetness; omit if using salted butter.
  • 2 cups All-Purpose Flour Provides structure; a gluten-free flour blend can replace it.
  • 1 tablespoon Cinnamon Brings the signature flavor; mix in nutmeg for warmth.
For the Cinnamon Swirl
  • 1/4 cup Granulated Sugar Creates a sweet cinnamon layer; adjust to taste.
  • 1 tablespoon Cinnamon Mix with sugar for the swirl.
For the Glaze
  • 1 cup Powdered Sugar Adds sweetness and creates a glaze; maple syrup is an alternative.
  • 2-4 tablespoons Milk Adjusts the consistency; any plant-based milk can be used.

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine mashed bananas, granulated and brown sugars, melted butter, eggs, and vanilla extract. Mix until smooth.
  3. Sprinkle baking soda and salt over the mixture, and fold in flour until just combined.
  4. In a separate bowl, mix granulated sugar and cinnamon for the cinnamon sugar swirl.
  5. Pour half of the batter into the loaf pan, sprinkle with half of the cinnamon sugar, then top with the remaining batter and sugar.
  6. Gently swirl the batter with a butter knife to create a marbled effect.
  7. Bake in the preheated oven for 50-60 minutes, checking for doneness with a toothpick.
  8. Allow the loaf to cool in the pan for 10-15 minutes before transferring to a wire rack.
