Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and packed brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, beating until fully combined.
  5. Gradually stir the flour mixture into the wet ingredients until just combined.
  6. Mix together packed brown sugar and ground cinnamon for the filling.
  7. Divide cookie dough in half, spread one half onto parchment paper, sprinkle half of the filling, and roll it up tightly.
  8. Slice the rolled dough into 1-inch rounds and place cut-side up on the baking sheet.
  9. Bake for 10-12 minutes or until edges are golden and centers are just set.
