- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, and ground cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and packed brown sugar until light and fluffy.
- Add the egg and vanilla extract, beating until fully combined.
- Gradually stir the flour mixture into the wet ingredients until just combined.
- Mix together packed brown sugar and ground cinnamon for the filling.
- Divide cookie dough in half, spread one half onto parchment paper, sprinkle half of the filling, and roll it up tightly.
- Slice the rolled dough into 1-inch rounds and place cut-side up on the baking sheet.
- Bake for 10-12 minutes or until edges are golden and centers are just set.
- Cool on the baking sheet briefly, then transfer to a wire rack and serve warm.
