- Preheat the Oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef for 5-7 minutes until browned. Drain excess fat.
- Stir in taco seasoning and ¾ cup of water; let simmer for about 5 minutes.
- Warm the refried beans in a smaller pan over low heat until spreadable, about 3-4 minutes.
- Spread refried beans on each tortilla, add beef mixture and sprinkle with cheese. Roll up tightly and place seam-side down in a baking dish.
- Pour enchilada sauce over assembled enchiritos and sprinkle with remaining cheese.
- Bake in preheated oven for 20 minutes until bubbly and golden.
- Let rest for 5 minutes, then garnish with onions and cilantro before serving.
