  • 1 cup Cheddar Cheese Substitute with Monterey Jack or dairy-free if desired.
For Assembly
  • 2 cups Enchilada Sauce Store-bought or homemade based on spice preference.
  • 1 small Onions For garnish.
  • 1 bunch Cilantro For garnish; can substitute with green onions.

Method
 

Step-by-Step Instructions
  1. Preheat the Oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef for 5-7 minutes until browned. Drain excess fat.
  3. Stir in taco seasoning and ¾ cup of water; let simmer for about 5 minutes.
  4. Warm the refried beans in a smaller pan over low heat until spreadable, about 3-4 minutes.
  5. Spread refried beans on each tortilla, add beef mixture and sprinkle with cheese. Roll up tightly and place seam-side down in a baking dish.
  6. Pour enchilada sauce over assembled enchiritos and sprinkle with remaining cheese.
  7. Bake in preheated oven for 20 minutes until bubbly and golden.
  8. Let rest for 5 minutes, then garnish with onions and cilantro before serving.
