Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a mixing bowl, crack open the large eggs and whisk until well blended and slightly frothy.
  3. Stir in the cottage cheese with the eggs until evenly combined.
  4. Fold in the shredded cheddar cheese until evenly distributed.
  5. Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder; mix gently.
  6. In a small cup, mix the baking powder with a splash of water, then fold into the egg mixture.
  7. Drizzle in the olive oil and stir until thoroughly combined.
  8. Fill each cup of the greased muffin tin with the egg mixture, almost to the top.
  9. Bake for 18-20 minutes, until tops are golden and set; a toothpick inserted should come out clean.
  10. Remove from the oven, cool for about 5 minutes, then run a knife around the edges and release each bite.
