- In a large mixing bowl, whisk together the eggs, cottage cheese, and shredded cheese until well combined. Add the milk, garlic powder, onion powder, salt, and pepper, and whisk until smooth.
- Stir in your chopped spinach and diced bell peppers into the egg mixture, ensuring an even distribution.
- Pour the egg mixture into the prepared muffin cups, filling each about 3/4 full.
