- Preheat your oven to 400°F (200°C).
- Unroll the thawed puff pastry onto a lightly floured surface. Gently roll it to an even thickness.
- In a mixing bowl, combine the softened cream cheese, crumbled feta, and your choice of fresh herbs. Mix until well blended.
- Spread the cream cheese mixture evenly over the prepared puff pastry, leaving a small border around the edges. Sprinkle the cranberries evenly across the cream cheese layer.
- Starting from one long edge, carefully roll the pastry into a log shape. Slice the log into ½-inch pieces.
- Line a baking sheet with parchment paper and arrange the sliced pinwheels. Brush the tops with the beaten egg.
- Bake for 15–20 minutes until golden-brown and puffy.
- Allow pinwheels to cool slightly on the baking sheet before serving warm.
