Equipment

  • mixing bowl
  • nonstick skillet
  • electric mixer

Method

Step-by-Step Instructions
  1. In a mixing bowl, whisk together 1 cup of milk, 1 cup of all-purpose flour, 2 eggs, 2 tablespoons of melted butter, and 2 tablespoons of granulated sugar until the mixture is smooth and well combined. Let the batter rest for about 10 minutes at room temperature.
  2. Heat a nonstick skillet or crepe pan over medium heat for about 2 minutes. Lightly coat the surface with butter or oil, then pour in about 1/4 cup of batter, swirling it to create a thin, even layer. Cook for 1-2 minutes, or until the edges start to lift and the bottom is golden brown. Carefully flip the crepe and cook for another minute until the other side is golden as well. Repeat with the remaining batter.
  3. In a separate bowl, pour in 1 cup of heavy cream and whip it with an electric mixer on medium speed for about 3-4 minutes, or until soft peaks form. For a touch of sweetness, you can add 1 tablespoon of powdered sugar while whipping.
  4. Once your crepes are cooked and your whipped cream is ready, place a crepe on a plate. Fill the center with slices of ripe banana and a generous dollop of whipped cream. Fold the crepe in half or roll it up gently.
  5. Dust the assembled creamy banana crepes with powdered sugar and drizzle with honey or maple syrup for added sweetness. Serve immediately.
