- Pour in heavy cream and raise heat slightly to bring to a gentle simmer. Stir continuously while adding grated parmesan, allowing it to melt and create a sauce. Season with salt, black pepper, and red pepper flakes.
- Bring a pot of salted water to boil. Cook tortellini according to package instructions, adding broccoli in the last 2-3 minutes. Drain, reserving a bit of pasta water.
- Return tortellini and broccoli to the skillet with the sauce, adding the sausage back in. Toss to coat and heat through for 2-3 minutes, adjusting the sauce with reserved pasta water if necessary.
- Serve hot, garnished with additional grated parmesan and a dash of black pepper.
