Ingredients

For the Tortellini
  • 3 cups Broccoli florets Other vegetables can be included.
  • 1 lb Italian sausage Can substitute with chicken or turkey sausage.
  • 1 cup Heavy cream Alternatives may reduce creaminess.
  • 1 cup Parmesan cheese Use freshly grated for best results.
  • 1 tbsp Olive oil Any neutral oil can work.
  • 1/2 tsp Salt Adjust based on preference.
  • 1/4 tsp Black pepper Can be omitted.
  • 1/4 tsp Red pepper flakes Optional based on taste.
  • 1 pkg Cheese tortellini Frozen can be used; adjust cooking time.
  • 3 cloves Minced garlic Fresh garlic is ideal.

Equipment

  • Large Skillet
  • pot

Method

Step‑by‑Step Instructions
  1. In a large skillet, heat olive oil over medium-high heat. Add crumbled Italian sausage and cook for about 5-7 minutes, until browned. Remove and set aside.
  2. Lower heat to medium and add minced garlic to the skillet, cooking for about 1 minute until fragrant. Stir continuously.
  3. Pour in heavy cream and raise heat slightly to bring to a gentle simmer. Stir continuously while adding grated parmesan, allowing it to melt and create a sauce. Season with salt, black pepper, and red pepper flakes.
  4. Bring a pot of salted water to boil. Cook tortellini according to package instructions, adding broccoli in the last 2-3 minutes. Drain, reserving a bit of pasta water.
  5. Return tortellini and broccoli to the skillet with the sauce, adding the sausage back in. Toss to coat and heat through for 2-3 minutes, adjusting the sauce with reserved pasta water if necessary.
  6. Serve hot, garnished with additional grated parmesan and a dash of black pepper.

Notes

Use freshly grated parmesan for the best melting quality. Avoid overcooking the tortellini to retain texture. Reheat leftovers with a splash of cream or pasta water for creaminess.
