  • 1 cup heavy cream substitute with coconut cream or half-and-half for lighter options
  • 1/2 cup chicken broth gluten-free version if needed
  • 1/2 cup Parmesan cheese or nutritional yeast for vegan
  • 1 pinch nutmeg to enhance flavor
For the Mashed Potatoes
  • 2 pounds Yukon Gold potatoes or red potatoes
  • 4 tablespoons butter softened
  • 1/2 cup heavy cream or almond milk for dairy-free

Method
 

Prepare Potatoes
  1. Peel and cube the potatoes, place them in a pot of salted water, and boil for 12-15 minutes until fork-tender.
Sear Shrimp
  1. Pat the shrimp dry, season with paprika and pepper. Heat olive oil in a skillet, then sear shrimp for 2 minutes on each side until pink.
Make Sauce
  1. In the same skillet, melt butter, add garlic and sauté until fragrant. Pour in cream and broth, simmer, then stir in Parmesan until melted.
Mash Potatoes
  1. Add butter and cream to drained potatoes and mash until smooth.
Combine
  1. Return shrimp to sauce, simmer for 2-3 minutes to heat through.
Serve
  1. Serve the shrimp and sauce over the mashed potatoes.
