Prepare Potatoes
- Peel and cube the potatoes, place them in a pot of salted water, and boil for 12-15 minutes until fork-tender.
Sear Shrimp
- Pat the shrimp dry, season with paprika and pepper. Heat olive oil in a skillet, then sear shrimp for 2 minutes on each side until pink.
Make Sauce
- In the same skillet, melt butter, add garlic and sauté until fragrant. Pour in cream and broth, simmer, then stir in Parmesan until melted.
Mash Potatoes
- Add butter and cream to drained potatoes and mash until smooth.
Combine
- Return shrimp to sauce, simmer for 2-3 minutes to heat through.
Serve
- Serve the shrimp and sauce over the mashed potatoes.
