  • 2 cups low-sodium chicken broth Helps control salt levels.
  • 1 cup heavy cream Substitute with half-and-half for a lighter sauce.
  • ½ cup freshly grated parmesan cheese Fresh is preferred for the best taste.
  • ½ cup sun-dried tomatoes Oil-packed, drained, and chopped.
  • 1 tsp smoked paprika Regular paprika works as well.
  • 1 tsp dried Italian seasoning Fresh herbs can be swapped in if available.
For the Pasta
  • ½ lb penne pasta Any sauce-holding pasta shape will work.
  • fresh basil, chopped For garnish.

Method
 

Cooking Instructions
  1. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat for 2-3 minutes. Sear the chicken for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  2. In the same skillet, reduce heat to medium, add unsalted butter and allow it to melt. Add minced garlic and sauté for about 30 seconds. Sprinkle in flour, whisk continuously for 1-2 minutes until bubbling.
  3. Gradually pour in chicken broth while whisking to prevent lumps. Slowly whisk in heavy cream, stirring until the sauce thickens, about 3-4 minutes. Add parmesan, stirring until it melts.
  4. Stir in chopped sun-dried tomatoes, smoked paprika, and Italian seasoning. Let simmer for 3-5 minutes until flavors meld.
  5. Return the chicken to the skillet, letting it simmer in the sauce for 2-3 minutes. Cook penne pasta according to package instructions, then drain and toss it with the chicken and sauce.
  6. Garnish with fresh basil and serve immediately.
