  • 1 cup Heavy Cream Coconut cream for dairy-free
  • 0.5 cups Parmesan Cheese Shredded
  • 1 tablespoon Italian Seasoning
  • 0.5 cups Pepperoncini Peppers Drained

Method
 

Step-by-Step Instructions
  1. Prep the chicken: Cut into thin strips, season generously with sea salt and ground pepper.
  2. Brown the chicken: Melt 2 tablespoons of butter in a skillet over medium-high heat, add chicken, and cook until golden brown, about 8 minutes.
  3. Sauté garlic & onions: Add more butter if needed and sauté diced onion for 3 minutes, then add garlic and cook for another 2 minutes.
  4. Create sauce base: Add chicken stock and roasted red peppers, simmer for about 5 minutes until reduced by half.
  5. Add cream & cheese: Stir in heavy cream and parmesan cheese, mix until smooth.
  6. Combine chicken & seasonings: Return chicken to skillet, add Italian seasoning and pepperoncini, stir to combine and simmer until heated through.
  7. Serve: Ladle over rice or pasta and enjoy!
