Ingredients
  

For the Soup Base
  • 1 tablespoon vegetable oil can substitute with olive oil
  • 12 ounces kielbasa smoky sausage; can substitute with andouille or bratwurst
  • 1 medium yellow onion can substitute with shallots
  • 2 medium carrots can substitute with parsnips or omit
  • 1 clove garlic minced
  • 1 teaspoon sweet paprika can use smoked paprika
  • 1 teaspoon ground cumin omit if not a fan
  • 4 cups chicken broth homemade or store-bought
For Texture and Creaminess
  • 2 cups savoy cabbage shredded; can substitute with green cabbage
  • 8 ounces cheese spread can replace with cream cheese or sour cream
  • 12 ounces pierogi potato and cheddar recommended, can be store-bought or homemade
  • 1/4 cup fresh dill chopped
For Finishing Touches
  • to taste freshly ground black pepper added just before serving

Method
 

Directions
  1. Prep all ingredients: slice kielbasa, chop onion, mince garlic, slice carrots, shred cabbage, and chop dill.
  2. Heat vegetable oil in a large pot over medium heat. Add sliced kielbasa and brown for 5 minutes, then set aside.
  3. In the same pot, sauté onion, garlic, and carrots for 3 minutes until onion is translucent.
  4. Stir in paprika and cumin, then add chicken broth and bring to boil.
  5. Add shredded cabbage to the boiling broth, reduce heat, cover, and simmer for 10 minutes.
  6. Stir in cheese spread until melted, then add pierogi and boil until they float, about 3-5 minutes for fresh or 6-8 minutes for frozen.
  7. Return kielbasa to pot with chopped dill, season with black pepper, and serve warm.
