Step-by-Step Instructions for Spinach Mushroom Pasta
- Fill a large pot with salted water and bring it to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup of pasta water then drain and set pasta aside.
- In a large skillet, heat olive oil or butter over medium-high heat. Add mushrooms and sauté for 6-7 minutes until golden and tender.
- Add minced garlic, salt, and black pepper to the skillet. Stir for about 1 minute until fragrant. Then add fresh spinach and cook until wilted, about 2-3 minutes.
- Reduce heat to low and pour in heavy cream, stirring to combine. Add Parmesan cheese and stir until melted and combined, about 2-3 minutes.
- Add reserved pasta to the skillet and toss with the sauce. Gradually add reserved pasta water until desired creaminess is reached.
- Transfer to serving plates, sprinkle with extra Parmesan, and serve warm.
