Method
 

Step-by-Step Instructions for Spinach Mushroom Pasta
  1. Fill a large pot with salted water and bring it to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup of pasta water then drain and set pasta aside.
  2. In a large skillet, heat olive oil or butter over medium-high heat. Add mushrooms and sauté for 6-7 minutes until golden and tender.
  3. Add minced garlic, salt, and black pepper to the skillet. Stir for about 1 minute until fragrant. Then add fresh spinach and cook until wilted, about 2-3 minutes.
  4. Reduce heat to low and pour in heavy cream, stirring to combine. Add Parmesan cheese and stir until melted and combined, about 2-3 minutes.
  5. Add reserved pasta to the skillet and toss with the sauce. Gradually add reserved pasta water until desired creaminess is reached.
  6. Transfer to serving plates, sprinkle with extra Parmesan, and serve warm.
