  • 1 cup heavy cream Half-and-half can be a lighter alternative.
  • 2 cloves garlic (minced) Garlic powder can be a substitute.
  • 1/2 cup Parmesan cheese (grated) Pecorino Romano can be used as a substitute.
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil Butter can be used for added richness.

Equipment

  • large pot
  • Skillet

Method

Step-by-Step Instructions
  1. In a large pot, bring salted water to a rolling boil. Add your choice of pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Season steak generously with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and sear the steak for about 4 minutes on each side until desired doneness. Let it rest before slicing.
  3. In the same skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and let it simmer, stirring continuously, for 3-4 minutes.
  4. Gradually stir in grated Parmesan cheese until melted. Adjust the sauce thickness with reserved pasta water if necessary.
  5. Slice the rested steak against the grain. In the skillet, combine the pasta, sliced steak, and creamy sauce, tossing gently to coat.
  6. Plate the pasta, drizzling any remaining sauce over the top, and garnish with additional Parmesan or herbs if desired.
