- In a large pot, bring salted water to a rolling boil. Add your choice of pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Season steak generously with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and sear the steak for about 4 minutes on each side until desired doneness. Let it rest before slicing.
- In the same skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and let it simmer, stirring continuously, for 3-4 minutes.
- Gradually stir in grated Parmesan cheese until melted. Adjust the sauce thickness with reserved pasta water if necessary.
- Slice the rested steak against the grain. In the skillet, combine the pasta, sliced steak, and creamy sauce, tossing gently to coat.
- Plate the pasta, drizzling any remaining sauce over the top, and garnish with additional Parmesan or herbs if desired.
