  • 1 cup Cashews Soaked beforehand, or sunflower seeds for nut-free
For the Pasta
  • 8 ounces Macaroni Noodles Cook until al-dente

Step‑by‑Step Instructions
  1. Prepare Cauliflower: Wash and chop fresh cauliflower florets into small, even pieces. Set aside.
  2. Cook Aromatics: In a skillet, melt coconut oil over medium heat. Add shallot and garlic, sauté for 5 minutes until softened.
  3. Make Sauce: Stir in almond milk and nutritional yeast. Add optional ingredients, season with salt, and simmer for 2-3 minutes.
  4. Simmer Cauliflower: Add cauliflower florets and soaked cashews. Cover and simmer for 15 minutes, stirring occasionally.
  5. Blend Sauce: Transfer to a blender and blend until smooth and creamy. Adjust thickness with water if necessary.
  6. Cook Pasta: Boil salted water and cook macaroni according to package directions until al dente.
  7. Combine: Return drained macaroni to skillet, pour sauce over, and stir for 2-3 minutes until well coated.
  8. Serve: Transfer to bowls, garnish with black pepper and paprika, and serve warm.
