Casserole Preparation
- Preheat your oven to 375°F (190°C). Gather all ingredients and equipment.
- Chop winter vegetables into bite-sized pieces. Sauté chopped onions in olive oil until translucent, about 5-7 minutes. Stir in minced garlic and sauté for another minute.
- Sprinkle in all-purpose flour in the skillet and stir for about 2 minutes. Gradually add cream and vegetable broth, whisking until smooth. Cook for 5-7 minutes until thickened.
- Add the chopped winter vegetables to the skillet, mix well to coat in the creamy sauce, and season with salt, pepper, and thyme.
- Pour the mixture into a greased baking dish, spreading it evenly. Optionally sprinkle cheese on top.
- Bake for about 30-35 minutes until top is bubbling and golden brown.
- Remove from the oven, let cool for a few minutes, then serve.
