  • 1 cup vegetable broth low-sodium preferred
  • 3 cloves garlic fresh minced
  • 1 medium onion sautéed
  • 2 tablespoons all-purpose flour can substitute with cornstarch for gluten-free

  • 1 teaspoon thyme fresh or dried

Method
 

Casserole Preparation
  1. Preheat your oven to 375°F (190°C). Gather all ingredients and equipment.
  2. Chop winter vegetables into bite-sized pieces. Sauté chopped onions in olive oil until translucent, about 5-7 minutes. Stir in minced garlic and sauté for another minute.
  3. Sprinkle in all-purpose flour in the skillet and stir for about 2 minutes. Gradually add cream and vegetable broth, whisking until smooth. Cook for 5-7 minutes until thickened.
  4. Add the chopped winter vegetables to the skillet, mix well to coat in the creamy sauce, and season with salt, pepper, and thyme.
  5. Pour the mixture into a greased baking dish, spreading it evenly. Optionally sprinkle cheese on top.
  6. Bake for about 30-35 minutes until top is bubbling and golden brown.
  7. Remove from the oven, let cool for a few minutes, then serve.
