  • 2 large Eggs beaten
  • 1/4 cup Flour can use all-purpose or gluten-free
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
  • 1/4 cup Oil for frying

Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. Peel and coarsely grate the sweet potatoes. Soak in cold water for 10 minutes, then drain and squeeze out excess moisture.
  3. In a bowl, combine grated sweet potatoes, chopped onion, eggs, flour, salt, and pepper. Mix until well combined.
  4. Heat oil in a skillet over medium heat for 3-5 minutes.
  5. Scoop tablespoon-sized portions of the mixture into the skillet, flattening them slightly with a spatula. Fry until golden brown, about 3-4 minutes per side.
  6. Transfer the hash browns to a baking sheet and bake for 10-12 minutes.
