- In a medium bowl, combine all-purpose flour, panko breadcrumbs, ground cinnamon, and a pinch of salt. Mix thoroughly.
- Wash and slice the apples into ¼-inch wedges and allow them to rest for a minute.
- In a small bowl, beat the eggs. Dip each apple wedge into the eggs, coating them fully.
- Roll each apple wedge in the breadcrumb mixture, pressing lightly to adhere.
- Place the coated apple wedges in a single layer in the air fryer basket.
- Set the timer for 8-10 minutes, shaking halfway through for even cooking.
- Carefully remove the apple fries and let them cool slightly, then sprinkle with sugar if desired.
