- Soak a rice paper sheet in warm water for 10–15 seconds until soft and pliable.
- Layer cooked vermicelli noodles, shredded vegetables, and either firm tofu or cooked shrimp in the center.
- Fold the sides of the rice paper over the filling and tightly roll from the bottom.
- Lightly brush or spray each roll with oil and place seam-side down in the air fryer.
- Preheat the air fryer to 375°F (190°C) for 2–3 minutes.
- Air fry the rolls for 8–10 minutes, flipping halfway through for even cooking.
- Serve hot with your choice of dipping sauce.
