Method
 

Step-by-Step Instructions
  1. In a small bowl, combine warm water and sugar. Sprinkle active dry yeast on top and let sit for 5 to 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and kosher salt. Pour in the yeast mixture and olive oil. Stir until a sticky dough forms.
  3. Cover the bowl and let the dough rise for 1 to 1½ hours, or until it has doubled in size.
  4. While the dough rises, prep your toppings by mincing garlic, grating Parmesan, and chopping fresh herbs.
  5. Grease a 9x13 inch baking pan with olive oil. Transfer the risen dough to the pan and stretch it to the edges.
  6. Create dimples all over the surface of the dough with your fingertips. Sprinkle with minced garlic, grated Parmesan, and herbs.
  7. Cover the pan again and let dough rise for an additional 20 to 30 minutes. Preheat your oven to 425°F (220°C).
  8. Bake for 20 to 25 minutes until the top is golden brown and crispy.
  9. Allow the focaccia to cool for at least 10 minutes before slicing and serving.
