Step-by-Step Instructions
  1. Start by finely shredding the green cabbage into 1/8-inch strips, then coarsely grate the carrots for added texture. Slice the scallions thinly, using both white and green parts, and mince two cloves of garlic to bring out vibrant flavors.
  2. In a small bowl, combine ½ cup of all-purpose flour, ½ teaspoon of salt, ¼ teaspoon of pepper, ½ teaspoon of paprika, ½ teaspoon of coriander, and ½ teaspoon of baking powder. Whisk these ingredients together until well blended.
  3. In a large mixing bowl, add the shredded cabbage, grated carrots, garlic, and sliced scallions. Gently fold in three lightly beaten eggs, followed by the dry ingredient mixture. Stir until everything is evenly incorporated to form a thick batter.
  4. Gently squeeze the mixture, removing excess moisture from the cabbage and carrots to prevent the fritters from falling apart when frying.
  5. In a large skillet, pour in enough neutral oil to cover the bottom by about ¼ inch. Heat the oil over medium heat until shimmering.
