Ingredients
  

For the Dressing
  • 1 cup full-fat mayonnaise
  • ½ cup Greek yogurt can substitute with sour cream
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
For the Chicken
  • 1 pound chicken cutlets tender and crispy
  • to taste sea salt and black pepper
  • as needed oil for frying
  • 1 cup all-purpose flour mixed with a pinch of salt and smoked paprika
  • 1 cup panko breadcrumbs
  • ½ cup regular breadcrumbs mixed with herbs and Parmesan
For the Assembly
  • 2 hearts romaine chopped into bite-sized pieces
  • 1 loaf French baguette or ciabatta/rolls as alternatives

Method
 

Preparation
  1. In a medium bowl, whisk together the dressing ingredients and refrigerate for at least 15 minutes.
  2. Chop romaine hearts and toss with ¼ cup of the prepared Caesar dressing; chill.
  3. Pound chicken cutlets to ½ inch thickness and season with sea salt and black pepper.
  4. Set up a dredging station: flour, egg mixture, breadcrumb mixture.
  5. Coat each chicken cutlet in flour, then egg, and finally breadcrumbs.
  6. Heat oil in a skillet and fry the chicken cutlets for 4-5 minutes on each side until golden.
  7. Slice the baguette, spread Caesar dressing, add chicken cutlet and romaine salad, then close the sandwich.
