  • 4 pieces Boneless, Skinless Chicken Breasts Pound to an even thickness.
For the Breading
  • 1 cup All-Purpose Flour Season with salt and pepper.
  • 2 large Large Eggs Lightly beaten.
  • 1 cup Plain Breadcrumbs (Panko preferred) Panko adds crunch.
For Frying
  • 1 cup Vegetable Oil Heat to the right temperature.
For Serving
  • 2 pieces Lemons Cut into wedges.

Method
 

Preparation
  1. Prepare the chicken by placing it between plastic wrap and pound to 1/2 inch thick.
  2. Set up the breading station with seasoned flour, beaten eggs, and panko breadcrumbs.
  3. Bread the chicken by dredging in flour, dipping in eggs, and covering with breadcrumbs.
  4. Heat the oil in a frying pan to the right temperature.
  5. Fry the chicken schnitzel until golden brown on both sides.
  6. Drain excess oil by placing schnitzel on paper towels.
