- In a large bowl, combine your cooked shredded chicken, shredded cheddar cheese, softened cream cheese, and sour cream. Mix until well blended and creamy.
- Sprinkle in the garlic powder, onion powder, cumin, chili powder, and a pinch of salt and pepper. Stir until spices are evenly mixed.
- Lay one flour tortilla flat and spoon 2-3 tablespoons of the filling onto the lower third of the tortilla.
- Firmly roll the tortilla around the filling, tucking in the sides to secure. Place seam-side down on a tray.
- In a skillet, pour about 1 inch of vegetable oil and heat over medium-high heat until it's between 350°F and 375°F.
- Carefully add the taquitos seam-side down into the hot oil, frying for about 2-3 minutes per side until golden brown.
- Once golden brown, remove from oil and place on a plate lined with paper towels to drain excess oil. Serve warm with toppings.
