  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1/4 tsp Cayenne Pepper to taste
  • 1 tsp Five Spice Powder optional
  • 300 ml Cold Sparkling Water adjust for thickness
For Frying
  • 2-3 inches Neutral Oil for deep frying
For Garnish and Dipping Sauces

  • to taste Furikake for garnish
  • to taste Sweet Chili Sauce for dipping
  • to taste Sriracha Mayo for dipping

Step‑by‑Step Instructions
  1. Prepare the enoki mushrooms by cutting the dirty ends, slicing into ¼-inch segments, rinsing gently, and patting dry.
  2. Heat the oil in a pot to 375°F (190°C) and prepare a baking tray with a wire rack.
  3. Make the batter by combining potato starch, all-purpose flour, baking powder, salt, white pepper, garlic powder, paprika, and optional spices. Gradually whisk in cold sparkling water.
  4. Dredge the mushrooms in the batter, ensuring they are fully coated but not clumping.
  5. Fry the mushrooms for 1-2 minutes until golden brown, then place them on the wire rack to drain excess oil.
  6. While warm, sprinkle with salt and furikake and serve immediately with your chosen dipping sauces.
