Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash and peel your Yukon Gold potatoes, then cut them into uniform 1/3-inch wide sticks.
  3. Place the cut potato sticks into a large bowl filled with cold water and let them soak for 10–15 minutes.
  4. Combine dried oregano, dill, garlic powder, black pepper, and salt in a mixing bowl. Toss the drained potatoes with olive oil and the seasoning mixture.
  5. Spread the seasoned potato fries in a single layer on the lined baking sheet.
  6. Bake the fries for 15 minutes, flip them with a spatula, then bake for an additional 6–8 minutes or until golden brown.
  7. Transfer the fries to a serving plate and generously sprinkle with chopped parsley, crumbled feta, and sliced red onion.
  8. Serve warm with tzatziki or aioli for dipping.
