Step‑by‑Step Instructions for Crispy Potato Roast
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine melted unsalted butter with extra-virgin olive oil. Brush the bottom of the baking dish with this mixture.
  3. Carefully peel and slice the russet potatoes very thinly.
  4. Arrange the thin potato slices vertically in the prepared baking dish, overlapping them slightly.
  5. Add thickly sliced shallots between the potato layers and sprinkle with coarse salt and red-pepper flakes.
  6. Brush generously with the remaining butter mixture over the top layer of potatoes.
  7. Bake for 1 hour and 15 minutes.
  8. After 75 minutes, top with fresh thyme and bake for an additional 35 minutes.
