  • 3 cloves Garlic Minced

  • 1 tablespoon Fresh Dill Toss in after roasting
  • 1 tablespoon Fresh Parsley Toss in after roasting
  • 1 teaspoon Lemon Zest or Juice Optional for brightness

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly and halve the larger ones.
  3. In a large mixing bowl, combine the potatoes, olive oil, garlic, salt, and pepper. Toss well.
  4. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
  5. Roast the potatoes for 25 to 30 minutes, flipping halfway through.
  6. Once done, toss with dill, parsley, and lemon zest or juice.
  7. Serve immediately while hot.
