Preparation
- Preheat your oven to 425°F (220°C).
- Wash the baby potatoes thoroughly and halve the larger ones.
- In a large mixing bowl, combine the potatoes, olive oil, garlic, salt, and pepper. Toss well.
- Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
- Roast the potatoes for 25 to 30 minutes, flipping halfway through.
- Once done, toss with dill, parsley, and lemon zest or juice.
- Serve immediately while hot.
