Dough Preparation
- In a mixing bowl, combine all-purpose flour, salt, and granulated sugar, stirring well.
- Gradually pour in warm water and vegetable oil, mixing until a rough dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
Filling Preparation
- While the dough rests, prepare the filling by mashing the ripe bananas until chunky.
- Mix in coconut sugar, toasted sesame seeds, and ground cinnamon, incorporating all ingredients.
Rolling and Filling
- Lightly oil your hands and the work surface. Divide the dough into equal portions and flatten into discs.
- Roll out each disc into a thin layer, about 1/8 inch thick.
- Place about 2 tablespoons of the banana filling in the center of each dough circle and fold edges over the filling.
Cooking
- In a skillet, heat unsalted butter over medium heat until melted and sizzling.
- Carefully place the filled roti seam-side down in the skillet, frying for approximately 2-3 minutes until golden brown.
- Flip the roti and fry the other side for an additional 2-3 minutes.
Serving
- Remove the roti from the skillet and place on a paper towel to drain excess butter.
- Drizzle with sweetened condensed milk and sprinkle with coconut sugar and toasted sesame seeds.
