For the Salmon Bites
  • 1 pound salmon skin removed
  • 2 tablespoons honey raw for richness
  • 3 cloves garlic freshly minced
  • 1 tablespoon Sriracha or to taste
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons coconut oil
For the Spice Blend
  • 1 teaspoon garlic powder freshly ground
  • 1 teaspoon paprika or smoked
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder or to taste
  • 1 teaspoon onion powder preferably fresh

Method
 

Preparation
  1. In a medium mixing bowl, combine garlic powder, paprika, kosher salt, chili powder, and onion powder. Whisk until evenly mixed.
  2. In a separate bowl, whisk together honey, apple cider vinegar, minced garlic, and Sriracha until well combined.
  3. Remove the skin from salmon and cut into bite-sized chunks. Toss with the spice blend.
  4. Heat coconut oil in a skillet over medium-high heat. Add salmon in a single layer.
  5. Flip the salmon after 1 minute and pour the glaze over them. Cook for another minute.
  6. Stir salmon and glaze together, cooking for another 60-90 seconds until the sauce thickens.
  7. Let the salmon bites rest for 2-3 minutes to allow the glaze to set.
  8. Transfer to a serving plate and enjoy warm.
