- Begin by placing the frozen puff pastry on the counter and letting it thaw for about 30 minutes.
- In a medium bowl, pour hot heavy cream over semi-sweet chocolate chips. Allow to sit a few minutes, then stir until smooth.
- While ganache cools, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
- Roll out thawed pastry to prevent sticking. Cut each sheet into 6 rectangles, creating a border for filling.
- Spoon cream cheese filling into each pastry rectangle, avoiding overfilling.
- In a bowl, whisk egg and water to create an egg wash. Brush mixture around edges of each pastry.
- Preheat oven to 400°F (200°C). Arrange pastries on a lined baking sheet and bake for 17-20 minutes until golden brown.
- Allow pastries to cool on a wire rack. Spread cooled ganache over cream cheese filling.
