Method
 

Step-by-Step Instructions
  1. Begin by placing the frozen puff pastry on the counter and letting it thaw for about 30 minutes.
  2. In a medium bowl, pour hot heavy cream over semi-sweet chocolate chips. Allow to sit a few minutes, then stir until smooth.
  3. While ganache cools, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
  4. Roll out thawed pastry to prevent sticking. Cut each sheet into 6 rectangles, creating a border for filling.
  5. Spoon cream cheese filling into each pastry rectangle, avoiding overfilling.
  6. In a bowl, whisk egg and water to create an egg wash. Brush mixture around edges of each pastry.
  7. Preheat oven to 400°F (200°C). Arrange pastries on a lined baking sheet and bake for 17-20 minutes until golden brown.
  8. Allow pastries to cool on a wire rack. Spread cooled ganache over cream cheese filling.
