Ingredients

For the Pasta
  • 2 cups corkscrew-shaped pasta Feel free to use any pasta shape you have on hand.
For the Dressing
  • 1/2 cup Italian-style salad dressing Consider making your own for an extra flavor boost.
  • 1/4 cup Mayonnaise Swap in low-fat mayo or Greek yogurt for a lighter option.
For the Salad
  • 2 cups chopped rotisserie chicken Leftover grilled chicken or turkey works perfectly.
  • 4 slices crispy cooked bacon Opt for turkey bacon for a lighter choice or omit for vegetarian-friendly!
  • 1 cup cubed Muenster cheese Substitute with cheddar or mozzarella if desired.
  • 1 cup chopped celery Swap with bell peppers for a different taste profile.
  • 1 cup chopped green bell pepper Mix in different colors for variety or omit completely.
  • 1 cup cherry tomatoes Grape tomatoes or diced regular tomatoes are great alternatives.
  • 1 medium avocado Add just before serving to keep it fresh.

Equipment

  • large pot
  • colander
  • mixing bowl
  • whisk

Method

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the corkscrew-shaped pasta and cook for 8-10 minutes until al dente. Once done, drain the pasta in a colander and rinse it under cold water to halt the cooking process and prevent clumping. Set it aside to cool while you prepare the dressing.
  2. In a large mixing bowl, combine Italian-style salad dressing with mayonnaise. Whisk the two together until you achieve a smooth, creamy consistency.
  3. Once your pasta has cooled, gently fold it into the dressing mixture along with the chopped rotisserie chicken, crispy cooked bacon, cubed Muenster cheese, chopped celery, green bell pepper, cherry tomatoes, and diced avocado.
  4. Cover the bowl with plastic wrap or a lid, and place the salad in the refrigerator for at least 30 minutes.
  5. After chilling, taste your Chicken Club Pasta Salad and adjust for seasoning if needed. Serve it chilled, garnished with extra avocado and colorful herbs if desired.
