  • 1.5 cups Spaghetti or Marinara Sauce Feel free to use homemade sauce.
  • 2 large Zucchini Slice evenly for consistent cooking.
  • 1 cup Shredded Mozzarella Cheese Substitute with sharp cheddar or Monterey Jack if desired.
For Extra Flavor
  • 1 teaspoon Crushed Red Chili Flakes Add for heat if desired.
  • 1 cup Ricotta Cheese Use as a substitute for mozzarella for a creamier texture.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine your cooked shredded chicken breast with 1.5 cups of sauce and mix thoroughly.
  3. Spread ½ cup of sauce evenly across the bottom of a 9x13 inch casserole dish.
  4. Slice the zucchini lengthwise into thin strips, about ¼ inch thick.
  5. Place about 3 tablespoons of the chicken mixture onto each zucchini slice and sprinkle mozzarella on top.
  6. Roll each zucchini slice tightly from one end to the other and place them seam-side down in the casserole dish.
  7. Pour the remaining ½ cup of sauce over the rolls and sprinkle ½ cup of mozzarella cheese on top.
  8. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes.
